Main Ingredients
- 2 lbs Potatoes waxy, like Yukon Gold or red potatoes
- 1 cup Chicken broth
- ½ cup Chopped onions
- ¼ cup White vinegar
- ¼ cup Vegetable oil
- 1 tablespoon Sugar
- 1 teaspoon Salt
- ¼ teaspoon Black pepper
- 4 slices Bacon cooked and crumbled
- 2 tablespoon Chopped fresh parsley
1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool.
2. While the potatoes are cooling, cook the bacon in a skillet until crispy. Remove and crumble.
3. In the same skillet, add the chopped onions and cook until translucent.
4. Add the chicken broth, vinegar, vegetable oil, sugar, salt, and pepper to the skillet. Bring to a boil.
5. Slice the cooled potatoes and place them in a mixing bowl. Pour the hot dressing over the potatoes and gently mix.
6. Add the crumbled bacon and chopped parsley. Mix gently and serve warm.
