  • 4 large potatoes baked and cubed
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup cheddar cheese shredded
  • ½ cup green onions chopped
  • ½ cup bacon bits cooked and crumbled
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until tender. Let them cool, then cube them.
  3. In a large mixing bowl, combine sour cream, mayonnaise, cheddar cheese, green onions, and bacon bits.
  4. Gently fold in the cubed potatoes. Season with salt and black pepper to taste.
  5. Chill in the refrigerator for at least 1 hour before serving.
