Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 can Guinness beer
  • 2 tablespoon Tomato paste
  • 4 large Carrots, chopped
  • 3 large Potatoes, peeled and chopped
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add beef and brown on all sides. Remove and set aside.
  3. 3. In the same pot, add onions and garlic. Cook until softened.
  4. 4. Stir in tomato paste, then add beef broth and Guinness. Bring to a boil.
  5. 5. Return beef to the pot. Add carrots and potatoes. Season with salt and pepper.
  6. 6. Reduce heat, cover, and simmer for 2 hours or until beef is tender.
