- 3 lbs Beef chuck roast cut into chunks
- 4 Dried guajillo chiles stems and seeds removed
- 2 Dried ancho chiles stems and seeds removed
- 1 Onion quartered
- 6 cloves Garlic peeled
- 2 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 1 teaspoon Ground black pepper
- 2 cups Beef broth
- 2 tablespoon Apple cider vinegar
- 2 tablespoon Vegetable oil
- to taste Salt
1. Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2 minutes.
2. Soak the toasted chiles in hot water for 20 minutes, then drain.
3. Blend the soaked chiles, onion, garlic, oregano, cumin, black pepper, and beef broth until smooth.
4. In a large pot, heat the vegetable oil over medium-high heat. Brown the beef chunks on all sides.
5. Pour the blended sauce over the beef, add apple cider vinegar, and bring to a boil.
6. Reduce heat to low, cover, and simmer for 3 hours or until the beef is tender.
7. Season with salt to taste and serve hot.
