Ingredients 

Main Ingredients

  • 3 lbs Beef chuck roast cut into chunks
  • 4 Dried guajillo chiles stems and seeds removed
  • 2 Dried ancho chiles stems and seeds removed
  • 1 Onion quartered
  • 6 cloves Garlic peeled
  • 2 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground black pepper
  • 2 cups Beef broth
  • 2 tablespoon Apple cider vinegar
  • 2 tablespoon Vegetable oil
  • to taste Salt

Instructions 

  1. 1. Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2 minutes.
  2. 2. Soak the toasted chiles in hot water for 20 minutes, then drain.
  3. 3. Blend the soaked chiles, onion, garlic, oregano, cumin, black pepper, and beef broth until smooth.
  4. 4. In a large pot, heat the vegetable oil over medium-high heat. Brown the beef chunks on all sides.
  5. 5. Pour the blended sauce over the beef, add apple cider vinegar, and bring to a boil.
  6. 6. Reduce heat to low, cover, and simmer for 3 hours or until the beef is tender.
  7. 7. Season with salt to taste and serve hot.
