  • 2 tablespoon Butter
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • ¼ cup All-purpose Flour
  • 1 cup Beer
  • 2 cups Chicken Broth
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • to taste Salt and Pepper

Instructions 

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in flour and cook for 2 minutes, stirring constantly.
  5. Slowly whisk in beer and chicken broth. Bring to a simmer.
  6. Reduce heat and stir in shredded cheese until melted.
  7. Add heavy cream and season with salt and pepper to taste.
  8. Simmer for 10 minutes, stirring occasionally.
  9. Serve hot with crusty bread.
