Beet Soup Recipe
A simple and delicious beet soup recipe.

Main Ingredients
- 4 cups Beets, peeled and diced
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable broth
- 1 tablespoon Olive oil
- to taste Salt and pepper
Heat olive oil in a pot over medium heat.
Add onions and garlic, sauté until soft.
Add beets and vegetable broth, bring to a boil.
Reduce heat, cover, and simmer for 45 minutes.
Blend the soup until smooth. Season with salt and pepper.
