Ingredients

  • 1 cup cooked rice
  • 1 can black beans drained and rinsed
  • 1 cup shredded cheese
  • 1 cup salsa
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the black beans, cumin, chili powder, salt, and pepper. Cook for 5 minutes.
  3. 3. In a mixing bowl, combine the cooked rice, black beans, and half of the shredded cheese.
  4. 4. Warm the tortillas in a skillet or microwave.
  5. 5. Spoon the rice and bean mixture onto each tortilla. Top with salsa and remaining cheese.
  6. 6. Roll up the tortillas and serve warm.
