Canadian Yellow Split Pea Soup with Ham Recipe

Main Ingredients
- 2 cups Yellow split peas rinsed and drained
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 cups Ham diced
- 1 cup Carrots chopped
- 1 cup Celery chopped
- 8 cups Chicken broth
- 1 teaspoon Dried thyme
- 1 teaspoon Black pepper to taste
1. In a large pot, sauté the onion and garlic until softened.
2. Add the ham, carrots, and celery. Cook for a few minutes.
3. Add the yellow split peas, chicken broth, thyme, and black pepper.
4. Bring to a boil, then reduce heat and simmer for about 2 hours, or until peas are tender.
5. Stir occasionally and add more broth if needed.
6. Adjust seasoning to taste and serve hot.
