Ingredients 

Main Ingredients

  • 2 cups white rice
  • 4 chicken breasts boneless, skinless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 onion chopped
  • 2 cloves garlic minced

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides, about 5 minutes per side. Remove chicken and set aside.
  3. 3. In the same skillet, add chopped onion and minced garlic. Cook until onion is translucent, about 5 minutes.
  4. 4. Add rice to the skillet and stir to coat with oil and onion mixture.
  5. 5. Pour in chicken broth and bring to a boil.
  6. 6. Return chicken breasts to the skillet, reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and chicken is cooked through.
  7. 7. Fluff rice with a fork and serve hot.
