Ingredients 

Brine Ingredients

  • 1 gallon water
  • ¾ cup kosher salt
  • ¾ cup sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon dried thyme
  • 4 cloves garlic, smashed

Instructions 

  1. 1. In a large pot, combine water, kosher salt, and sugar. Stir until dissolved.
  2. 2. Add black peppercorns, dried thyme, and smashed garlic cloves to the pot.
  3. 3. Bring the mixture to a boil, then remove from heat and let it cool completely.
  4. 4. Submerge the chicken in the brine, cover, and refrigerate for at least 4 hours or overnight.
  5. 5. Remove chicken from brine, rinse under cold water, and pat dry before cooking.
