Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 tablespoon Olive oil
  • 1 cup Onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 can Diced tomatoes
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in chicken broth, diced tomatoes, black beans, corn, chili powder, cumin, salt, and black pepper. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Add shredded chicken and cook for another 5 minutes.
  6. Serve hot, garnished with your favorite toppings like cheese, sour cream, and cilantro.
