Ingredients

  • 2 cups Cooked Chicken, chopped
  • ½ cup Mayonnaise
  • ¼ cup Celery, chopped
  • ¼ cup Red Onion, chopped
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 8 slices Bread
  • 4 leaves Lettuce

Instructions 

  1. 1. In a mixing bowl, combine the chopped chicken, mayonnaise, celery, red onion, lemon juice, salt, and black pepper. Mix well.
  2. 2. Place a lettuce leaf on a slice of bread, then spoon some chicken salad mixture on top. Cover with another slice of bread.
  3. 3. Repeat with the remaining bread slices and chicken salad mixture.
  4. 4. Serve immediately or refrigerate for later.
