Main Ingredients
- 1 lb Crabmeat fresh or canned
- 2 cups Heavy Cream
- 1 cup Chicken Broth
- 1 tablespoon Butter
- 1 tablespoon Flour
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
1. In a large pot, melt the butter over medium heat.
2. Add the flour and whisk continuously to make a roux.
3. Slowly add the chicken broth while whisking to avoid lumps.
4. Pour in the heavy cream and bring to a simmer.
5. Add the crabmeat, salt, and pepper. Simmer for 10 minutes.
6. Use a blender to puree the bisque until smooth.
7. Serve hot, garnished with a sprinkle of fresh herbs if desired.
