Ingredients

  • 8 pieces Corn tortillas
  • 2 cups Cooked chicken, shredded
  • 1 cup Shredded cheese
  • 1 cup Enchilada sauce
  • 1 cup Sour cream for serving
  • 1 cup Chopped cilantro for garnish

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Warm tortillas in a skillet or microwave to make them pliable.
  3. Fill each tortilla with shredded chicken and a little cheese. Roll up and place seam-side down in a baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle remaining cheese on top.
  5. Bake in preheated oven for 20-25 minutes until cheese is melted and bubbly.
  6. Garnish with chopped cilantro and serve with sour cream.
