  • 4 large flour tortillas
  • 6 eggs beaten
  • 1 cup shredded cheese
  • 1 cup cooked sausage or bacon crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat. Add bell peppers and onions, cook until soft.
  2. 2. Add beaten eggs to the skillet, scramble until cooked through.
  3. 3. Warm tortillas in the microwave for about 20 seconds to make them pliable.
  4. 4. Divide the egg mixture, cheese, and cooked sausage or bacon evenly among the tortillas.
  5. 5. Roll up each tortilla, folding in the sides as you go.
  6. 6. Wrap each burrito in aluminum foil and place in a freezer bag. Freeze.
  7. 7. To reheat, remove foil, wrap in a paper towel, and microwave for 2-3 minutes or until heated through.
