Greek Garbanzo Bean Salad

Main Ingredients
- 1 can garbanzo beans drained and rinsed
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup kalamata olives pitted and halved
- ¼ cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- to taste salt
- to taste black pepper freshly ground
In a large mixing bowl, combine the garbanzo beans, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
