Main Ingredients
- 2 lbs Beef chuck, cut into cubes
- 2 tablespoon Olive oil
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 2 cups Tomato sauce
- 1 cup Beef broth
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 2 pcs Bay leaves
- to taste Salt and pepper
- 2 cups Potatoes, peeled and cubed
- 2 cups Carrots, sliced
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add chopped onion and minced garlic to the pot. Cook until onion is translucent.
Pour in tomato sauce and beef broth. Stir in oregano, thyme, bay leaves, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
Add potatoes and carrots to the pot. Continue to simmer for another hour, or until vegetables are tender.
Remove bay leaves before serving. Enjoy your Greek-style beef stew!
