Leftover Chicken Croquettes Recipe
A great way to use up leftover chicken, these croquettes are crispy on the outside and tender on the inside.

Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- ½ cup Breadcrumbs
- 1 large Egg beaten
- ¼ cup Chopped parsley
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- ½ cup All-purpose flour for coating
- ½ cup Breadcrumbs for coating
- ¼ cup Vegetable oil for frying
In a mixing bowl, combine the shredded chicken, mashed potatoes, ½ cup breadcrumbs, beaten egg, chopped parsley, salt, and black pepper. Mix well.
Shape the mixture into small patties or balls.
Coat each patty in flour, then dip in beaten egg, and finally coat with breadcrumbs.
Heat the vegetable oil in a frying pan over medium heat.
Fry the croquettes until golden brown on each side, about 3-4 minutes per side.
Drain on paper towels and serve hot.
