  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese
  • 1 egg beaten
  • ¼ cup flour
  • ¼ cup chopped green onions
  • to taste salt and pepper
  • 2 tablespoon vegetable oil for frying

Instructions 

  1. In a mixing bowl, combine mashed potatoes, shredded cheese, beaten egg, flour, and green onions. Mix well.
  2. Season with salt and pepper to taste.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Scoop about ¼ cup of the potato mixture and form into a patty. Place in the hot pan.
  5. Cook for 3-4 minutes on each side or until golden brown and crispy.
  6. Repeat with the remaining mixture. Serve hot.
