Leftover Mashed Potato Pancakes
Delicious and easy way to use up leftover mashed potatoes.

Main Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheese
- 1 egg beaten
- ¼ cup flour
- ¼ cup chopped green onions
- to taste salt and pepper
- 2 tablespoon vegetable oil for frying
In a mixing bowl, combine mashed potatoes, shredded cheese, beaten egg, flour, and green onions. Mix well.
Season with salt and pepper to taste.
Heat vegetable oil in a frying pan over medium heat.
Scoop about ¼ cup of the potato mixture and form into a patty. Place in the hot pan.
Cook for 3-4 minutes on each side or until golden brown and crispy.
Repeat with the remaining mixture. Serve hot.
