Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 egg
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon coarse sugar for topping

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together cream, egg, lemon zest, and lemon juice.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick circle and cut into 8 wedges.
  7. Place wedges on a baking sheet and sprinkle with coarse sugar.
  8. Bake for 20 minutes or until golden brown. Let cool on a wire rack.
