Manhattan Clam Chowder Recipe

Main Ingredients
- 2 tablespoon Olive Oil
- 1 cup Onion, diced
- 1 cup Celery, diced
- 1 cup Carrots, diced
- 3 cloves Garlic, minced
- 4 cups Clam Juice
- 2 cans Diced Tomatoes 14.5 oz each
- 2 cups Potatoes, diced
- 2 cans Clams, chopped 6.5 oz each
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add onion, celery, and carrots. Cook until softened, about 5 minutes.
Add garlic and cook for another minute.
Pour in clam juice and diced tomatoes. Bring to a boil.
Add potatoes, thyme, oregano, salt, and pepper. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
Stir in clams and parsley. Cook for another 5 minutes.
Serve hot and enjoy!
