Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, diced
  • 1 cup Celery, diced
  • 1 cup Carrots, diced
  • 3 cloves Garlic, minced
  • 4 cups Clam Juice
  • 2 cans Diced Tomatoes 14.5 oz each
  • 2 cups Potatoes, diced
  • 2 cans Clams, chopped 6.5 oz each
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Pour in clam juice and diced tomatoes. Bring to a boil.
  5. Add potatoes, thyme, oregano, salt, and pepper. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
  6. Stir in clams and parsley. Cook for another 5 minutes.
  7. Serve hot and enjoy!
