Marinated Black-Eyed Pea Salad

- 2 cups cooked black-eyed peas
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh parsley, chopped

- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- ½ teaspoon black pepper
In a large mixing bowl, combine black-eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
