Mexican Fiesta Pasta Salad Recipe

Main Ingredients
- 2 cups pasta any shape
- 1 can black beans drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 unit red bell pepper diced
- 0.5 unit red onion finely chopped
- 0.25 cup cilantro chopped
- 0.25 cup olive oil
- 2 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
- Cook pasta according to package instructions. Drain and let cool. 
- In a large bowl, combine pasta, black beans, corn, bell pepper, red onion, and cilantro. 
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper. 
- Pour dressing over pasta salad and toss to combine. 
- Chill in the refrigerator for at least 30 minutes before serving.
