Ingredients 

Main Ingredients

  • 2 cups pasta any shape
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 unit red bell pepper diced
  • 0.5 unit red onion finely chopped
  • 0.25 cup cilantro chopped
  • 0.25 cup olive oil
  • 2 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions 

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine pasta, black beans, corn, bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  4. Pour dressing over pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
