Main Ingredients
- 1 cup long-grain white rice
- 2 tablespoon vegetable oil
- 1 cup tomato sauce
- 2 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 cup frozen peas and carrots
Heat the oil in a large skillet over medium heat.
Add the rice and cook, stirring frequently, until golden brown.
Stir in the tomato sauce, chicken broth, salt, and cumin. Bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes.
Add the peas and carrots, cover, and cook for an additional 5 minutes.
Fluff with a fork and serve.
