  • 1 cup long-grain white rice
  • 2 tablespoon vegetable oil
  • 1 cup tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 cup frozen peas and carrots

Instructions 

  1. Heat the oil in a large skillet over medium heat.
  2. Add the rice and cook, stirring frequently, until golden brown.
  3. Stir in the tomato sauce, chicken broth, salt, and cumin. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes.
  5. Add the peas and carrots, cover, and cook for an additional 5 minutes.
  6. Fluff with a fork and serve.
