Mexican Shrimp Cocktail

Main Ingredients
- 1 lb shrimp, cooked and peeled chopped
- 1 cup tomato juice
- ½ cup ketchup
- ¼ cup lime juice freshly squeezed
- 1 jalapeño seeded and finely chopped
- ½ cup red onion finely chopped
- 1 avocado diced
- ¼ cup cilantro chopped
- to taste salt
- to taste pepper
In a large mixing bowl, combine the tomato juice, ketchup, lime juice, and jalapeño.
Add the chopped shrimp, red onion, avocado, and cilantro. Stir gently to combine.
Season with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes before serving.
Serve cold with tortilla chips or saltine crackers.
