- 4 cups Corn kernels fresh or frozen
- 1 cup Cotija cheese crumbled
- 1 cup Mayonnaise
- 1 cup Cilantro chopped
- 1 unit Lime juiced
- 1 teaspoon Chili powder
- 1 unit Jalapeño diced
- 1 pinch Salt to taste
Heat a skillet over medium-high heat and add the corn kernels. Cook until slightly charred, about 5-7 minutes. Remove from heat and let cool.
