  • 4 medium beets peeled and sliced
  • 1 cup vinegar
  • ½ cup sugar
  • ½ teaspoon salt
  • ½ cup water

Instructions 

  1. 1. Boil the beets in a saucepan until tender, about 30 minutes.
  2. 2. In another saucepan, combine vinegar, sugar, salt, and water. Bring to a boil.
  3. 3. Place the sliced beets in a jar and pour the hot vinegar mixture over them.
  4. 4. Seal the jar and let it cool. Refrigerate for at least 24 hours before serving.
