Ingredients

  • 2 cups Pumpkin puree
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until fragrant.
  2. Add pumpkin puree and chicken broth. Stir to combine.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove from heat and use a blender to puree the soup until smooth.
  5. Return to pot, stir in heavy cream, and season with salt and pepper to taste. Heat through before serving.
