  • 2 fillets Salmon skinless
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Preheat grill pan over medium-high heat.
  2. 2. Season salmon fillets with salt and pepper.
  3. 3. Grill salmon for 4-5 minutes on each side, until cooked through.
  4. 4. In a mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. 5. In a small bowl, whisk together olive oil and lemon juice. Pour over salad and toss to combine.
  6. 6. Flake grilled salmon and add to the salad. Serve immediately.
