Slow Cooker Beef Bourguignon

Ingredients 

Main Ingredients

  • 2 lbs Beef Chuck cut into 1-inch cubes
  • 1 cup Red Wine
  • 2 cups Beef Broth
  • 1 cup Carrots sliced
  • 1 cup Mushrooms sliced
  • 1 cup Pearl Onions peeled
  • 4 cloves Garlic minced
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches, then transfer to the slow cooker.
  2. 2. In the same skillet, add garlic, tomato paste, and cook for 1 minute. Add red wine, scraping up any browned bits from the bottom of the skillet. Pour into the slow cooker.
  3. 3. Add beef broth, carrots, mushrooms, pearl onions, thyme, salt, and pepper to the slow cooker. Stir to combine.
  4. 4. Cover and cook on low for 8 hours or until the beef is tender.
  5. 5. Serve hot, garnished with fresh parsley if desired.
