Slow Cooker Oxtail Stew Recipe
A hearty and flavorful oxtail stew made easy in a slow cooker.

Main Ingredients
- 2 lbs oxtail
- 1 large onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 can diced tomatoes 14.5 oz
- 2 tablespoon tomato paste
- 2 teaspoon thyme dried
- 2 teaspoon paprika
- 1 teaspoon black pepper
- 2 cups carrots sliced
- 2 cups potatoes diced
- 1 cup peas frozen
1. Season oxtail with salt and pepper.
2. Heat a large skillet over medium-high heat. Brown oxtail on all sides.
3. Transfer oxtail to slow cooker. Add onion, garlic, beef broth, diced tomatoes, tomato paste, thyme, paprika, and black pepper.
4. Cover and cook on low for 8 hours.
5. Add carrots and potatoes. Cook for another 1-2 hours until vegetables are tender.
6. Stir in peas and cook for an additional 10 minutes.
7. Serve hot.
