Spanish Rice Recipe
A simple and delicious Spanish Rice recipe.

Main Ingredients
- 1 cup long grain white rice
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 ounces)
- 2 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon chili powder
- ½ teaspoon cumin
Heat olive oil in a large skillet over medium heat.
Add rice and cook, stirring constantly, until golden brown.
Add onion and garlic, and cook until onion is tender.
Stir in diced tomatoes, chicken broth, salt, chili powder, and cumin.
Bring to a boil, reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is tender and liquid is absorbed.
Fluff with a fork and serve.
