Ingredients

  • 4 cups sliced summer squash
  • 1 cup shredded cheddar cheese
  • 1 cup bread crumbs
  • 1 cup sour cream
  • 1 medium onion, chopped
  • 2 tablespoons butter, melted
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced squash, chopped onion, sour cream, and half of the shredded cheese.
  3. Season with salt and pepper to taste.
  4. Transfer the mixture to a greased baking dish.
  5. In a separate bowl, mix the bread crumbs with the melted butter.
  6. Sprinkle the bread crumb mixture and the remaining cheese over the top of the casserole.
  7. Bake in the preheated oven for 25 minutes, or until the top is golden and crispy.
