Summer Squash Soup Recipe
A light and refreshing summer squash soup, perfect for warm days.

Main Ingredients
- 4 cups Summer squash, chopped
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable broth
- 1 tablespoon Olive oil
- to taste Salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, sauté until soft.
Add chopped summer squash and cook for a few minutes.
Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
Blend the soup until smooth using a blender or immersion blender.
Season with salt and pepper to taste. Serve hot.
