Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and cubed
  • 2 large Russet Potatoes peeled and cubed
  • ½ cup Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 2 tablespoon Apple Cider Vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Chopped Green Onions
  • ¼ cup Chopped Celery

Instructions 

  1. 1. Boil sweet potatoes and russet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes, green onions, and celery to the bowl. Toss gently to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
