Ingredients

  • 2 cans Tuna drained
  • 1 cup Red Cabbage shredded
  • 1 cup Carrots shredded
  • 1 cup Cilantro chopped
  • 8 pieces Taco Shells
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lime Juice freshly squeezed

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the drained tuna to the skillet and cook for 3-4 minutes.
  3. 3. In a mixing bowl, combine shredded red cabbage, carrots, and cilantro.
  4. 4. Add salt, black pepper, and lime juice to the vegetable mix and toss well.
  5. 5. Warm the taco shells according to package instructions.
  6. 6. Fill each taco shell with cooked tuna and top with the vegetable mix.
  7. 7. Serve immediately and enjoy!
