Ingredients 

Main Ingredients

  • 4 large Russet Potatoes
  • ½ cup Sour Cream
  • ¼ cup Milk
  • 2 tablespoon Butter softened
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Cheddar Cheese shredded
  • 4 slices Bacon cooked and crumbled
  • 2 tablespoon Chives chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and pierce them with a fork. Bake for 1 hour.
  3. Remove the potatoes from the oven and let them cool slightly. Cut them in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin shell.
  4. In the mixing bowl, combine the potato flesh with sour cream, milk, butter, salt, pepper, and half of the cheese. Mix until well blended and creamy.
  5. Spoon the mixture back into the potato shells. Top with the remaining cheese and crumbled bacon.
  6. Return the potatoes to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped chives and serve hot.
