Vegetable Beef Soup Recipe

Main Ingredients
- 1 lb Beef stew meat cut into bite-sized pieces
- 2 cups Carrots sliced
- 2 cups Potatoes diced
- 1 cup Celery sliced
- 1 cup Onion chopped
- 1 can Diced tomatoes 14.5 oz can
- 4 cups Beef broth
- 2 cups Water
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
- 1 teaspoon Dried thyme
- 1 teaspoon Dried basil
1. In a large pot, brown the beef over medium heat.
2. Add the onions and cook until they are translucent.
3. Add the carrots, potatoes, celery, and cook for a few minutes.
4. Pour in the beef broth, water, and diced tomatoes.
5. Season with salt, pepper, thyme, and basil.
6. Bring to a boil, then reduce heat and let it simmer for about 45 minutes, or until the vegetables are tender.
7. Serve hot and enjoy!
