Vegetarian Chili Recipe

Main Ingredients
- 1 tablespoon Olive Oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 medium Bell Pepper, diced
- 2 cans Diced Tomatoes (14.5 oz each)
- 1 can Black Beans, drained and rinsed (15 oz)
- 1 can Kidney Beans, drained and rinsed (15 oz)
- 1 cup Corn Kernels
- 2 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 cup Vegetable Broth
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until softened, about 5 minutes.
Add minced garlic and diced bell pepper, cook for another 3 minutes.
Stir in diced tomatoes, black beans, kidney beans, corn, chili powder, cumin, paprika, salt, and black pepper.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
Serve hot, garnished with your favorite toppings.
