Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 medium Bell Pepper, diced
  • 2 cans Diced Tomatoes (14.5 oz each)
  • 1 can Black Beans, drained and rinsed (15 oz)
  • 1 can Kidney Beans, drained and rinsed (15 oz)
  • 1 cup Corn Kernels
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Vegetable Broth

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Add minced garlic and diced bell pepper, cook for another 3 minutes.
  4. Stir in diced tomatoes, black beans, kidney beans, corn, chili powder, cumin, paprika, salt, and black pepper.
  5. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. Serve hot, garnished with your favorite toppings.
