Main Ingredients
- 2 medium zucchini grated
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 pcs eggs beaten
- ½ cup grated Parmesan cheese
- 2 tablespoon olive oil for frying
Grate the zucchini and squeeze out excess moisture.
In a bowl, mix grated zucchini, flour, salt, pepper, beaten eggs, and Parmesan cheese.
Heat olive oil in a frying pan over medium heat.
Scoop spoonfuls of the mixture into the pan and flatten them slightly. Cook until golden brown on both sides.
Drain on paper towels and serve warm.
