Ingredients 

Main Ingredients

  • 2 pieces Steak (ribeye or sirloin) about 1 inch thick
  • 2 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper freshly ground
  • 2 cloves Garlic smashed
  • 2 sprigs Fresh Thyme

Instructions 

  1. 1. Take the steaks out of the fridge and let them come to room temperature for about 30 minutes.
  2. 2. Preheat your cast iron skillet over high heat until it's very hot.
  3. 3. Pat the steaks dry with paper towels, then season generously with salt and black pepper on both sides.
  4. 4. Add the olive oil to the skillet, then place the steaks in the pan. Sear for 2-3 minutes on each side until a crust forms.
  5. 5. Add the garlic and thyme to the pan, then tilt the pan and spoon the hot oil over the steaks for another minute.
  6. 6. Check the internal temperature with a meat thermometer. For medium-rare, it should read 130°F (54°C).
  7. 7. Remove the steaks from the pan and let them rest for 5 minutes before serving.
