  • 2 medium Eggplants sliced into rounds
  • 4 slices Bread your choice
  • 1 cup Mozzarella Cheese shredded
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Tomato Sauce

Instructions 

  1. Preheat the grill pan over medium heat.
  2. Brush eggplant slices with olive oil and season with salt and pepper.
  3. Grill the eggplant slices for about 4-5 minutes on each side until tender.
  4. Toast the bread slices if desired.
  5. Assemble the sandwiches by layering grilled eggplant, tomato sauce, and mozzarella cheese between two slices of bread.
  6. Serve immediately and enjoy!
