Main Ingredients
- 2 medium Eggplants sliced into rounds
- 4 slices Bread your choice
- 1 cup Mozzarella Cheese shredded
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Tomato Sauce
Preheat the grill pan over medium heat.
Brush eggplant slices with olive oil and season with salt and pepper.
Grill the eggplant slices for about 4-5 minutes on each side until tender.
Toast the bread slices if desired.
Assemble the sandwiches by layering grilled eggplant, tomato sauce, and mozzarella cheese between two slices of bread.
