  • 2 Avocados halved and pitted
  • 4 Eggs
  • to taste Salt
  • to taste Pepper
  • to taste Chopped chives optional, for garnish

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Scoop out some of the avocado flesh to create a larger hole.
  3. Place the avocado halves on a baking sheet.
  4. Crack an egg into each avocado half.
  5. Season with salt and pepper.
  6. Bake for 15 minutes, or until the eggs are cooked to your liking.
  7. Garnish with chopped chives if desired and serve immediately.
