Ingredients

  • 4 cups stale bread, cubed preferably ciabatta or country bread
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh basil, torn

Instructions 

  1. 1. In a large mixing bowl, combine the bread, tomatoes, cucumber, and red onion.
  2. 2. Drizzle with olive oil and red wine vinegar. Season with salt and black pepper.
  3. 3. Toss everything together until the bread is well-coated with the dressing.
  4. 4. Let the salad sit for about 10 minutes to allow the bread to soak up the flavors.
  5. 5. Add the fresh basil just before serving and give it one last toss.
