Ingredients

  • 2 lbs Tomatoes halved
  • 1 Onion quartered
  • 4 cloves Garlic peeled
  • 2 tablespoon Olive oil
  • 3 cups Vegetable broth
  • to taste Salt and pepper
  • 1 teaspoon Sugar

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the oven for 30-35 minutes, until the vegetables are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender and add the vegetable broth. Blend until smooth.
  5. Pour the soup into a large pot and bring to a simmer. Add sugar and adjust seasoning with salt and pepper to taste.
  6. Simmer for 10 minutes, then serve hot.
