  • 2 cups Cooked corned beef, diced
  • 2 cups Potatoes, diced preferably Yukon Gold
  • 1 cup Onion, chopped
  • 1 tablespoon Butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 2 tablespoon Fresh parsley, chopped optional, for garnish

Instructions 

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add the onions and cook until they are soft and translucent.
  3. Add the diced potatoes and cook until they are golden brown and crispy.
  4. Stir in the corned beef and cook until everything is heated through.
  5. Season with salt and pepper to taste.
