Instructions
Heat olive oil in a pot over medium heat.
Add chopped onion and minced garlic, sauté until translucent.
Add fresh spinach and cook until wilted.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Remove from heat and blend the soup until smooth.
Return to pot, stir in milk, and season with salt and pepper to taste. Heat through before serving.
