Vegetarian Chickpea Sandwich Filling Recipe
A tasty and easy-to-make vegetarian chickpea sandwich filling.

Main Ingredients
- 1 can Chickpeas drained and rinsed
- ¼ cup Mayonnaise
- 1 tablespoon Lemon juice freshly squeezed
- 1 tablespoon Dijon mustard
- 1 stalk Celery finely chopped
- 2 tablespoon Red onion finely chopped
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
1. In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
2. Add the mayonnaise, lemon juice, Dijon mustard, celery, and red onion. Mix well.
3. Season with salt and black pepper to taste. Mix again.
4. Serve on bread, in a wrap, or with crackers.
