West African Peanut Stew Recipe
A rich and hearty stew with a blend of vegetables and peanut butter, typical of West African cuisine.

Main Ingredients
- 2 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red Bell Pepper, chopped
- 1 Sweet Potato, peeled and cubed
- 1 cup Diced Tomatoes
- 4 cups Vegetable Broth
- ½ cup Peanut Butter
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Salt
- ¼ teaspoon Black Pepper
- 1 cup Spinach, chopped
- ¼ cup Chopped Peanuts (for garnish)
Heat olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the chopped red bell pepper and sweet potato. Cook for about 5 minutes.
Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potatoes are tender.
Stir in the peanut butter, ground cumin, ground coriander, salt, and black pepper. Simmer for another 5 minutes.
Add the chopped spinach and cook until wilted, about 2 minutes.
Serve hot, garnished with chopped peanuts.
